Ingredients

Main Ingredients

  • Sweet potatoes – 2 medium (about 600 g / 1.3 lb)
  • Extra virgin olive oil – 2 tbsp (30 ml)
  • Salt – 1/2 tsp (to taste)
  • Black pepper – 1/4 tsp
  • Greek yogurt – 200 g (3/4 cup)
  • Honey – 2 to 4 tbsp

Optional Toppings

  • Sesame seeds – 1 tbsp
  • Crushed pistachios or pecans – 1 tbsp
  • Fresh mint leaves
  • Lemon or orange zest

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Peel and cut sweet potatoes into 2–3 cm cubes.
  3. Place them in a bowl, add olive oil, salt, and pepper, then toss well.
  4. Spread the cubes on the baking sheet in a single layer.
  5. Roast for 15–20 minutes, flip, then roast another 15–20 minutes until golden and tender.
  6. While roasting, place Greek yogurt in a bowl. Add citrus zest if desired.
  7. Spread yogurt on serving plates.
  8. Top with roasted sweet potatoes.
  9. Drizzle generously with honey.
  10. Finish with sesame seeds, nuts, and fresh mint.
  11. Serve warm or at room temperature.
