Main Ingredients
- Sweet potatoes – 2 medium (about 600 g / 1.3 lb)
- Extra virgin olive oil – 2 tbsp (30 ml)
- Salt – 1/2 tsp (to taste)
- Black pepper – 1/4 tsp
- Greek yogurt – 200 g (3/4 cup)
- Honey – 2 to 4 tbsp
Optional Toppings
- Sesame seeds – 1 tbsp
- Crushed pistachios or pecans – 1 tbsp
- Fresh mint leaves
- Lemon or orange zest
Instructions
- Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Peel and cut sweet potatoes into 2–3 cm cubes.
- Place them in a bowl, add olive oil, salt, and pepper, then toss well.
- Spread the cubes on the baking sheet in a single layer.
- Roast for 15–20 minutes, flip, then roast another 15–20 minutes until golden and tender.
- While roasting, place Greek yogurt in a bowl. Add citrus zest if desired.
- Spread yogurt on serving plates.
- Top with roasted sweet potatoes.
- Drizzle generously with honey.
- Finish with sesame seeds, nuts, and fresh mint.
- Serve warm or at room temperature.
